8 oz. pasta of your choice (penne or farfalle work great)

1 medium head of broccoli, cut into florets

1 tablespoon olive oil

2 cups ricotta cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon lemon zest

2 tablespoons fresh lemon juice

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional for a kick)

Fresh basil leaves, for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    On a baking sheet, toss the broccoli florets with olive oil, salt, and pepper. Spread them out in a single layer and roast in the oven for about 20 minutes or until they are crispy and golden.

      Meanwhile, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water and then drain the pasta.

        In a large mixing bowl, combine the ricotta cheese, grated Parmesan, garlic powder, onion powder, lemon zest, lemon juice, and red pepper flakes if using. Mix until smooth and creamy.

          Add the drained pasta to the ricotta mixture, along with a splash of the reserved pasta water. Toss everything together until the pasta is well coated. If the sauce is too thick, gradually add more pasta water until you reach your desired creaminess.

            Once the broccoli is done roasting, gently fold it into the pasta mixture.

              Adjust seasoning with salt and pepper as needed.

                Serve immediately, garnished with fresh basil leaves and an extra sprinkle of Parmesan cheese, if desired.
