Creamy Sun-Dried Tomato Salmon Recipe

Ingredients
  

4 salmon fillets (about 6 oz each)

1 cup heavy cream

1/2 cup sun-dried tomatoes, chopped (drained if in oil)

1/4 cup fresh basil, chopped

3 garlic cloves, minced

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

Salt and pepper to taste

Lemon wedges, for serving

Instructions
 

Season the salmon fillets with salt and pepper on both sides.

    Heat olive oil in a large skillet over medium-high heat. Once hot, add the salmon fillets, skin-side down if they have skin, and cook for about 5-6 minutes until the skin is crispy and the salmon is cooked halfway up. Flip and cook for another 3-4 minutes or until cooked through. Remove the salmon from the skillet and set aside.

      In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.

        Stir in chopped sun-dried tomatoes and cook for another 1-2 minutes.

          Reduce heat to medium-low and pour in the heavy cream. Stir until well combined, then gradually add the Parmesan cheese, stirring continuously until melted and creamy.

            Mix in the chopped basil and adjust seasoning with salt and pepper to taste.

              Return the cooked salmon to the skillet, spooning the creamy sauce over the top to coat. Allow it to simmer for an additional 2-3 minutes to reheat the salmon and meld the flavors together.

                Serve warm with lemon wedges on the side for an added zest.
