Ingredients

8 oz pasta of your choice (fusilli or penne works great)

1 cup sun-dried tomatoes, chopped (oil-packed for extra flavor)

2 cups fresh spinach

1 cup heavy cream

1/2 cup Parmesan cheese, grated

2 garlic cloves, minced

1 tablespoon olive oil

Salt and black pepper to taste

1/2 teaspoon red pepper flakes (optional)

Fresh basil leaves for garnish

Instructions

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Add Tomatoes and Spinach: Stir in the chopped sun-dried tomatoes and cook for another 2-3 minutes. Then, add the fresh spinach and cook until wilted, about 2 minutes.

Make the Cream Sauce: Pour in the heavy cream, stirring to combine. Let it simmer for a couple of minutes, allowing it to thicken slightly.

Incorporate Cheese: Stir in the grated Parmesan cheese and season the sauce with salt, black pepper, and red pepper flakes (if using). Mix well until the cheese is melted and the sauce is creamy.

Combine with Pasta: Add the cooked pasta to the skillet with the sauce, tossing everything together. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.

Serve: Once combined, remove from heat and serve immediately. Garnish with fresh basil leaves and additional Parmesan cheese if desired.
