1 ½ cups graham cracker crumbs

¼ cup granulated sugar

½ cup unsalted butter, melted

16 oz cream cheese, softened

1 cup granulated sugar

3 large eggs

1 tablespoon vanilla extract

½ cup sour cream

1 tablespoon cornstarch

¼ cup heavy cream

¼ cup brown sugar (for brulee topping)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth, about 2-3 minutes. Gradually add in the granulated sugar, mixing until well combined.

        Add Eggs and Vanilla: Add the eggs one at a time, mixing on low speed after each addition. Then, incorporate the vanilla extract, sour cream, and cornstarch until fully blended and smooth.

          Pour and Bake: Pour the cheesecake filling over the cooled crust in the springform pan. Bake for 55-65 minutes, or until the edges are set and the center is slightly jiggly.

            Cool: Turn off the oven and leave the cheesecake inside with the door slightly ajar for about an hour. This helps prevent cracking. Remove and let cool completely at room temperature before refrigerating for at least 4 hours, preferably overnight.

              Brulee the Top: Once chilled, carefully spread the heavy cream evenly over the cheesecake's surface. Evenly sprinkle the brown sugar on top of the cream layer.

                Caramelize: Use a kitchen torch to melt and caramelize the sugar until it forms a golden brown crust. Alternatively, you can place the cheesecake under a broiler for 1-2 minutes, watching closely to prevent burning.
