1 pound fresh salmon fillet, skinless and boneless, cut into bite-sized pieces

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Oil, for frying

Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice preference)

1 teaspoon lime juice

Chopped green onions (for garnish)

Prepare Salmon Bites: In a mixing bowl, season the salmon pieces with salt, pepper, garlic powder, onion powder, and paprika. Mix well to ensure the seasoning evenly coats the salmon.

    Set Up Breading Station: In one bowl, place the flour; in a second bowl, add the beaten eggs; and in a third bowl, pour in the panko breadcrumbs.

      Bread the Salmon: Dredge each salmon piece first in flour, shaking off the excess. Next, dip it into the beaten eggs, and finally, coat thoroughly with panko breadcrumbs. Press the panko firmly onto the salmon to ensure a good coating.

        Heat the Oil: In a large skillet, heat about 1/2 inch of oil over medium-high heat. To test if the oil is ready, drop a few breadcrumbs into the oil; if they sizzle and float, the oil is hot enough.

          Fry the Salmon Bites: Working in batches, add the breaded salmon bites to the hot oil. Fry them for about 3-4 minutes on each side, or until they are golden brown and crispy. Use a slotted spoon to remove the bites and place them on a paper towel-lined plate to drain excess oil.

            Make Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until well combined.
