4 large chicken thighs (bone-in, skin-on)

1 cup buttermilk

1 teaspoon hot sauce (optional)

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper

1 teaspoon black pepper

Salt to taste

Vegetable oil for frying

Marinate the Chicken: In a bowl, whisk together buttermilk and hot sauce (if using). Add the chicken thighs and ensure they’re well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Coating: In another mixing bowl, combine flour, paprika, garlic powder, onion powder, cayenne pepper, black pepper, and salt. Mix well to combine.

      Heat the Oil: In a deep frying pan or dutch oven, pour in enough vegetable oil to cover the chicken pieces (about 2 inches deep) and heat over medium-high heat until it reaches 350°F (175°C).

        Dredge the Chicken: Remove the chicken pieces from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring it's completely coated. Shake off any excess flour and set aside.

          Fry the Chicken: Carefully place the chicken in the hot oil, skin side down. Do not overcrowd the pan. Fry for about 7-8 minutes on each side, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

            Drain the Chicken: Once cooked, transfer the fried chicken to a wire rack set over a baking sheet to drain excess oil. This will keep the chicken crispy.
