1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon cayenne pepper (adjust for spice)

1 cup buttermilk (or 1 cup milk mixed with 1 tablespoon lemon juice, allowed to sit for 5 minutes)

1 cup breadcrumbs (panko for extra crunch)

Salt and pepper to taste

Vegetable oil, for frying

Prep the Onions: Carefully peel the onions and slice them into 1/4-inch thick rings. Separate the rings and set aside.

    Make the Batter: In a large bowl, combine the flour, baking powder, smoked paprika, garlic powder, cayenne, salt, and pepper. Whisk until evenly mixed.

      Prepare Buttermilk Dip: In another bowl, pour the buttermilk (or milk with lemon juice).

        Coat the Onion Rings: Dip each onion ring first into the buttermilk, allowing any excess to drip off, then dredge it in the flour mixture, ensuring it's evenly coated. Shake off any excess flour.
