1 pound large shrimp, peeled and deveined

1/2 cup cornstarch

1/2 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 cup cold sparkling water

Oil for frying

For the Orange Sauce:

1 cup fresh orange juice

Zest of 1 orange

1/4 cup brown sugar

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon grated fresh ginger

1 teaspoon cornstarch mixed with 2 tablespoons water (slurry)

Prepare the Shrimp: Start by patting the shrimp dry with paper towels to remove excess moisture. This helps in achieving a crispy texture.

    Make the Batter: In a bowl, combine cornstarch, all-purpose flour, baking powder, salt, black pepper, and garlic powder. Gradually whisk in the cold sparkling water until you have a smooth batter that is thick enough to coat the shrimp.

      Heat the Oil: In a deep pan or skillet, heat about 2 inches of oil over medium-high heat until it reaches 350°F (180°C). Test the oil temperature by dropping a little batter in - it should sizzle immediately.

        Fry the Shrimp: Dip each shrimp into the batter, letting any excess drip off, then carefully place it into the hot oil. Fry in batches to avoid overcrowding, about 3-4 minutes or until golden brown and crispy. Once cooked, use a slotted spoon to remove the shrimp and place them on a plate lined with paper towels to drain excess oil.

          Prepare the Orange Sauce: In a medium saucepan, combine the fresh orange juice, orange zest, brown sugar, soy sauce, rice vinegar, and grated ginger. Cook over medium heat, stirring until the sugar dissolves. Bring to a gentle simmer.

            Thicken the Sauce: Add the cornstarch slurry to the sauce, stirring continuously until it thickens slightly, about 2-3 minutes. Remove from heat.

              Toss the Shrimp: In a large bowl, toss the fried shrimp with the orange sauce until they are well coated.
