Crock Pot Cheesy Lasagna Soup

1 pound ground beef or Italian sausage

1 onion, chopped

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups chicken or vegetable broth

2 teaspoons dried basil

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional)

8 lasagna noodles, broken into pieces

1 cup ricotta cheese

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

In a skillet over medium heat, cook the ground beef or Italian sausage until browned. Drain any excess fat.

    Add chopped onion and minced garlic to the skillet and sauté until the onion is translucent, about 3-4 minutes.

      Transfer the meat mixture into a crock pot. Add crushed tomatoes, broth, basil, oregano, red pepper flakes (if using), and season with salt and pepper. Stir well to combine.

        Cover the crock pot and cook on low for 6-8 hours, or high for 3-4 hours.

          About 30 minutes before serving, stir in the broken lasagna noodles and cook until they are tender.

            Once the noodles are cooked, turn off the crock pot and add ricotta cheese and 1 cup of mozzarella cheese, stirring until the cheeses are melted and well incorporated.

              Serve the soup hot, topped with remaining mozzarella cheese and Parmesan cheese. Garnish with fresh basil if desired.
