6 medium russet potatoes, peeled and diced

1 large onion, chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup milk (or half-and-half for extra creaminess)

1 cup shredded cheddar cheese

½ cup sour cream or Greek yogurt

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

¼ cup fresh chives, chopped (for garnish)

4 slices of cooked bacon, crumbled (optional for garnish)

Instructions
 

Place the diced potatoes, chopped onion, and minced garlic in the crockpot.

    Pour in the vegetable broth and stir to combine. Add the dried thyme, smoked paprika, salt, and pepper.

      Cover the crockpot and cook on low for 7-8 hours or high for 4-5 hours until the potatoes are tender.

        Once the potatoes are cooked, use a potato masher or immersion blender to slightly mash or blend the soup to your desired consistency.

          Stir in the milk and sour cream, then mix well until fully combined. Let it cook for an additional 15-30 minutes on low to heat through.

            Just before serving, stir in the shredded cheddar cheese until melted. Adjust seasoning if necessary.

              Serve hot, garnished with chopped chives and crumbled bacon if desired.
