3-4 pounds pork shoulder

1 tablespoon smoked paprika

1 tablespoon onion powder

1 tablespoon garlic powder

1 teaspoon cumin

1 teaspoon chili powder

2 tablespoons brown sugar

1 teaspoon salt

1/2 teaspoon black pepper

1 cup maple syrup

1/2 cup apple cider vinegar

1/4 cup Dijon mustard

1 cup chicken broth

1-2 chipotle peppers in adobo sauce, minced (adjust to taste)

1 tablespoon olive oil

Instructions
 

Prepare the Pork: Pat the pork shoulder dry with paper towels. In a small bowl, mix together smoked paprika, onion powder, garlic powder, cumin, chili powder, brown sugar, salt, and black pepper.

    Season the Meat: Rub the spice mixture all over the pork shoulder, ensuring it’s well-coated for maximum flavor.

      Sear the Pork (Optional): In a large skillet over medium-high heat, heat olive oil. Add the pork shoulder and sear it on all sides until browned (about 4-5 minutes per side). This step adds depth of flavor but can be skipped if in a hurry.

        Combine Sauces: In a medium bowl, whisk together maple syrup, apple cider vinegar, Dijon mustard, chicken broth, and minced chipotle peppers.

          Add to the Crockpot: Place the seared or raw pork shoulder in the crockpot. Pour the maple-chipotle sauce over the pork, ensuring it's covered well.

            Cook: Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the pork is tender and easily falls apart.

              Shred the Pork: Once cooked, remove the pork from the crockpot and place it on a cutting board. Use two forks to shred the pork into bite-sized pieces.

                Mix with Sauce: Return the shredded pork to the crockpot, mixing it well with the remaining sauce. Allow it to soak in the flavors for an additional 15 minutes on low.
