Prep the Zucchini: Start by washing the zucchinis and cutting them into fry-shaped strips, about 1/4 inch thick. Place them on a paper towel and sprinkle with salt to draw out excess moisture. Let them sit for about 10 minutes, then pat dry with another paper towel.
Set Up the Breading Station: In one bowl, beat the eggs. In another bowl, mix together the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper.
Coat the Zucchini: Dip each zucchini fry into the beaten eggs, ensuring it's well-coated. Then, roll it in the breadcrumb mixture until fully coated. Place the coated zucchini fries on a plate or a baking sheet.
Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.
Air Fry the Zucchini Fries: Spray the air fryer basket with cooking spray. Arrange the zucchini fries in a single layer in the basket, taking care not to overcrowd them. You may need to do this in batches. Lightly spray the tops of the zucchini fries with more cooking spray.
Cook: Air fry the zucchini fries for 10-12 minutes, flipping them halfway through, until they are golden brown and crispy.
