2 lbs pork shoulder, trimmed and cut into large chunks

1/2 cup fresh orange juice

1/4 cup fresh lime juice

6 cloves garlic, minced

1 tablespoon lime zest

1 tablespoon orange zest

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1/2 cup olive oil

1/4 cup fresh cilantro, chopped (for garnish)

Instructions
 

In a large mixing bowl, combine the orange juice, lime juice, garlic, lime zest, orange zest, cumin, oregano, smoked paprika, black pepper, and salt. Whisk together until well mixed.

    Place the pork shoulder pieces in a large resealable plastic bag or a glass dish. Pour the marinade over the pork, ensuring all pieces are well coated. Seal the bag or cover the dish, and refrigerate for at least 4 hours (preferably overnight for more flavor).

      Preheat your oven to 300°F (150°C).

        Remove the pork from the marinade, reserving the marinade for later use. In a large oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat. Once hot, add the pork in batches and brown on all sides for about 3-4 minutes per side. Remove the browned pork and set aside.

          Pour the reserved marinade into the same skillet, scraping any browned bits from the bottom. Return the pork to the skillet, nestling it in the marinade.

            Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Cook for 2.5 to 3 hours, or until the pork is fork-tender.

              Once cooked, remove the pork from the oven and let it rest for 15-20 minutes before shredding or slicing.

                Serve the warm pork with the pan juices drizzled over the top and garnish with fresh chopped cilantro.
