1 cup dried white beans (such as cannellini or great northern), rinsed and soaked overnight

4 cups vegetable broth

1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 carrot, diced

1 teaspoon ground cumin

1 teaspoon oregano

½ teaspoon smoked paprika

1 bay leaf

1 lime, juiced (for serving)

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Instructions
 

In a large pot, heat olive oil over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté for about 5 minutes until the vegetables are soft and fragrant.

    Stir in the diced carrot, cumin, oregano, smoked paprika, and bay leaf. Cook for another 2-3 minutes, allowing the spices to bloom.

      Add the soaked white beans and vegetable broth to the pot. Bring to a boil, then reduce heat to low and let it simmer uncovered for about 45-60 minutes, or until the beans are tender.

        Once the beans are cooked, remove the bay leaf. Use a fork to mash a few beans against the side of the pot to thicken the soup slightly.

          Season the soup with salt and pepper to taste. If desired, add a little more broth or water to reach your desired consistency.

            Serve the soup hot, garnished with fresh cilantro and a drizzle of lime juice.
