1 can (15 oz) pumpkin puree

1 can (15 oz) black beans, rinsed and drained

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon curry powder

1 teaspoon ground cumin

1/2 teaspoon turmeric

1/4 teaspoon red pepper flakes (adjust to taste)

4 cups vegetable broth

1 can (13.5 oz) coconut milk

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro, chopped for garnish

Squeeze of lime for serving

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until it becomes translucent.

    Stir in the minced garlic and grated ginger, and cook for an additional 1-2 minutes until fragrant.

      Add the curry powder, ground cumin, turmeric, and red pepper flakes. Stir for about 1 minute to toast the spices, enhancing their flavors.

        Pour in the pumpkin puree and mix well, allowing it to incorporate with the spices and onion mixture.

          Add the rinsed black beans and the vegetable broth. Stir until everything is well combined. Bring the mixture to a gentle simmer.

            After simmering for 15-20 minutes, add the coconut milk and stir until the soup is creamy. Let it cook for another 5-10 minutes, allowing all the flavors to meld together.

              Season with salt and pepper to taste.

                Using an immersion blender, blend the soup until smooth. If you prefer a chunky texture, feel free to blend only halfway.

                  Serve hot, garnished with fresh chopped cilantro and a squeeze of lime for an extra zing!
