Ingredients

2 large russet potatoes, peeled and diced

1 cup cream cheese, softened

1/2 cup sour cream

1 cup shredded cheddar cheese

1/2 cup cooked bacon bits

1/4 cup green onions, sliced

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup crushed crispy fried onions, for topping

Fresh parsley, chopped, for garnish

Instructions

Preheat your oven to 375°F (190°C).

In a large pot of salted water, boil the diced potatoes until fork-tender, about 15 minutes. Drain and allow to cool slightly.

In a large mixing bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, salt, and pepper. Mix until smooth and creamy.

Add the boiled potatoes to the cream cheese mixture and gently fold until the potatoes are evenly coated.

Fold in the shredded cheddar cheese, cooked bacon bits, and sliced green onions, mixing until well distributed.

Transfer the potato mixture into a greased baking dish, spreading it evenly.

Sprinkle the top with the crushed crispy fried onions for added crunch.

Bake uncovered in the preheated oven for 25-30 minutes or until the top is golden brown and bubbly.

Once done, remove the dish from the oven and garnish with fresh parsley.

Let it cool for a few minutes before serving.
