8 rice paper wrappers

200g fresh salmon, skinless and boneless

1 cup cooked vermicelli noodles

1 cup mixed salad greens (lettuce, mint, cilantro)

1 carrot, julienned

1 cucumber, julienned

1 red bell pepper, thinly sliced

2 tablespoons sesame oil

1 tablespoon lime juice

Salt and pepper to taste

1 egg (for egg wash)

Optional: Sliced avocados for added creaminess

Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.

    Prepare the Salmon: Drizzle the salmon with sesame oil, lime juice, salt, and pepper. Place it on the baking tray and bake for around 15 minutes or until cooked through. Once done, let it cool and then flake it into bite-sized pieces.

      Soak the Rice Paper: In a large shallow dish, fill with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds until it softens. Lay it flat on a clean surface.

        Assemble the Spring Rolls: On the bottom third of the rice paper, add a small handful of salad greens, a portion of vermicelli noodles, a few pieces of flaked salmon, and a bit of julienned carrot, cucumber, and bell pepper. Optionally, add a few slices of avocado for creaminess.

          Roll the Wrapper: Fold the sides of the rice paper over the filling, then roll it away from you tightly into a cylinder shape. Repeat with the remaining rice papers and filling.

            Prepare for Baking: Beat the egg in a small bowl. Lightly brush each spring roll with the egg wash and place them seam side down on the lined baking tray.

              Bake the Spring Rolls: Bake in the preheated oven for 10-12 minutes, or until the spring rolls are golden and crispy. Flip halfway through to ensure even cooking.

                Serve & Enjoy: Allow cooling slightly before serving while warm. Pair with your favorite dipping sauce such as a homemade peanut or hoisin sauce.
