6 large eggs, hard-boiled and chopped

1/3 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 celery stalk, finely diced

2 green onions, finely chopped

1/4 cup sweet pickle relish

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh dill or parsley, for garnish

Instructions
 

Begin by boiling the eggs. Place the eggs in a pot of water, bring to a boil, and then simmer for 10-12 minutes. Once cooked, transfer to an ice bath to cool. Peel and chop the eggs.
