4 salmon fillets

2 tablespoons Dijon mustard

1 cup fresh parsley, chopped

1 tablespoon fresh dill, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

1 small head of green cabbage, finely shredded

1 carrot, grated

2 tablespoons apple cider vinegar

1 tablespoon honey

1/2 teaspoon celery seed

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small bowl, mix the Dijon mustard, chopped parsley, dill, garlic powder, onion powder, salt, and pepper to form a paste.

      Place the salmon fillets on a parchment-lined baking sheet and brush them generously with the herb mustard mixture.

        Drizzle olive oil over the herb-crusted salmon and bake in the preheated oven for about 12-15 minutes, or until the salmon flakes easily with a fork.

          While the salmon is baking, prepare the cabbage slaw. In a large bowl, combine the shredded cabbage and grated carrot.

            In a separate small bowl, whisk together the apple cider vinegar, honey, celery seed, and a sprinkle of salt and pepper.

              Pour the dressing over the cabbage and carrot mixture, tossing well to combine. Let it sit for about 5 minutes for flavors to meld.

                Once the salmon is cooked, remove it from the oven and serve it alongside the cabbage slaw.
