1 lb baby carrots, peeled

2 tablespoons balsamic vinegar

1 tablespoon olive oil

1 teaspoon honey or maple syrup

Salt and pepper to taste

Fresh thyme for garnish (optional)

For the Orange Tahini Yogurt:

1 cup plain Greek yogurt

2 tablespoons tahini

Zest of 1 orange

Juice of 1/2 orange

1 teaspoon maple syrup

Salt to taste

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare Carrots: In a large bowl, toss the baby carrots with balsamic vinegar, olive oil, honey (or maple syrup), salt, and pepper until evenly coated.

      Roast Carrots: Spread the coated carrots on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until tender and caramelized, tossing halfway through for even cooking.
