2 cups granulated sugar

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 cup vegetable oil

3 large eggs, room temperature

2 cups ripe bananas, mashed (about 4 medium bananas)

1 cup crushed pineapple, drained

1 cup finely chopped walnuts or pecans

1 teaspoon vanilla extract

1/2 cup shredded coconut (optional)

Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

1 tablespoon milk (if needed for consistency)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease three 9-inch round cake pans and line the bottoms with parchment paper.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt until well combined.

      Mix Wet Ingredients: In another bowl, combine the oil, eggs, mashed bananas, crushed pineapple, vanilla extract, and nuts. Stir until fully mixed.

        Combine Mixtures: Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are perfectly fine. If using coconut, fold it in at this step.

          Divide and Bake: Divide the batter evenly among the three prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.

            Prepare Cream Cheese Frosting: In a medium bowl, beat the softened cream cheese and butter with an electric mixer until smooth and creamy. Gradually add in the powdered sugar and vanilla extract, mixing until smooth. If the frosting is too thick, add milk a tablespoon at a time to reach desired consistency.
