2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups milk (preferably whole)

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 teaspoon Dijon mustard

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

½ cup breadcrumbs (optional, for topping)

2 tablespoons grated Parmesan cheese (optional, for topping)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large pot, bring salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

      In the same pot, melt the unsalted butter over medium heat. Once melted, whisk in the flour until smooth and bubbly (about 1 minute).

        Gradually add the milk while continuing to whisk, ensuring no lumps form. Keep cooking and stirring until the mixture thickens (about 5-7 minutes).

          Lower the heat and stir in the shredded cheddar and mozzarella cheeses, mixing until they are completely melted and smooth.
