1 lb ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 tsp cumin

1 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1/2 cup green olives, pitted and chopped

1/4 cup fresh cilantro, chopped

1 package (about 15) pre-made empanada dough disks

1 egg, beaten (for egg wash)

Olive oil for frying

Instructions
 

In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

    Add the minced garlic and diced bell pepper, cooking for an additional 2 minutes until fragrant.

      Stir in the ground beef, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.

        Drain excess fat if necessary, then season the beef mixture with cumin, paprika, salt, and black pepper. Mix in the chopped olives and cilantro, and cook for another 1-2 minutes to combine flavors. Remove from heat and let the filling cool slightly.

          Preheat the oven to 400°F (200°C).

            Take one empanada dough disk and place a heaping tablespoon of the beef filling in the center. Fold the dough over to create a half-moon shape, pressing the edges together. Use a fork to crimp the seams and seal the empanada.

              Repeat the process with the remaining dough and filling.

                Arrange the empanadas on a baking sheet lined with parchment paper. Brush each one with the beaten egg to give them a golden color while baking.

                  Bake the empanadas in the preheated oven for about 20-25 minutes or until they are golden brown and crispy.
