1 cup long-grain white rice

2 cups chicken or vegetable broth

1 tablespoon vegetable oil

1 medium onion, finely chopped

1 bell pepper (red or green), diced

2 celery stalks, diced

2 cloves garlic, minced

1 pound ground beef or turkey (or plant-based alternative)

1 tablespoon Cajun seasoning

1 teaspoon dried thyme

Salt and pepper to taste

1 cup green onions, sliced (for garnish)

Instructions
 

Rinse the rice under cold water until the water runs clear. This helps to remove excess starch and keeps the rice from being gummy.

    In a medium saucepan, bring the chicken or vegetable broth to a boil. Add the rinsed rice, reduce to a simmer, cover, and cook for about 18-20 minutes or until the rice is fluffy and all the liquid is absorbed. Remove from heat and let it sit covered for another 5 minutes.

      While the rice is cooking, heat the vegetable oil in a large skillet over medium heat. Add the chopped onion, bell pepper, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

        Stir in the minced garlic and cook for an additional minute until fragrant.

          Increase the heat to medium-high and add the ground beef or turkey to the skillet. Cook, breaking it up with a spatula until browned and cooked through. Drain any excess fat if necessary.

            Sprinkle in the Cajun seasoning, dried thyme, salt, and pepper. Stir well to combine, ensuring the ground meat is evenly coated with spices.

              Once the rice is cooked, add it directly to the skillet with the meat and vegetables. Gently fold all the ingredients together, ensuring the rice is well mixed and coated in flavors. Cook for another 2-3 minutes, letting the flavors meld together.

                Remove from heat and garnish with sliced green onions before serving.
