Ingredients

1 pound ground beef

1 medium onion, diced

2 cloves garlic, minced

4 medium potatoes, thinly sliced

1 cup shredded cheddar cheese

1 cup sour cream

1 cup beef broth

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon dried oregano

1 tablespoon olive oil

Fresh chives, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

Brown the Beef: In a large skillet, heat the olive oil over medium heat. Add the diced onions and minced garlic, cooking until the onion is translucent. Then, add the ground beef, breaking it up with a spatula. Cook until browned and fully cooked, about 7-10 minutes. Drain excess fat if necessary.

Season the Meat: Stir in the paprika, salt, black pepper, and oregano into the browned beef. Mix well to combine and remove from heat.

Prepare the Casserole Layer: In a greased 9x13 inch baking dish, layer half of the sliced potatoes on the bottom. Spread half of the cooked beef mixture on top of the potatoes, then drizzle half of the beef broth over this layer.

Add Cheese and Sour Cream: Spread half of the sour cream over the beef, then sprinkle a layer of cheddar cheese on top.

Repeat Layers: Add the remaining potato slices, followed by the remaining beef mixture and broth. Finish by spreading the rest of the sour cream and topping with the remaining cheese.

Cover and Bake: Cover the baking dish with foil and bake in the preheated oven for 40 minutes.

Uncover and Crisp: After 40 minutes, remove the foil and continue to bake for an additional 15-20 minutes, or until the top is bubbly and golden brown.

Serve: Remove from the oven and let it sit for about 5 minutes before serving. Garnish with fresh chopped chives for a pop of color and flavor.
