4 cups vegetable or chicken broth

1 cup mushrooms, sliced (shiitake or button)

1 cup firm tofu, diced

1 cup bamboo shoots, sliced

1/2 cup white vinegar

2 tablespoons soy sauce

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

1 teaspoon ground white pepper

2 green onions, chopped

2 garlic cloves, minced

1 teaspoon sesame oil

1 egg, beaten (optional)

Salt to taste

Instructions
 

In a large pot, bring the vegetable or chicken broth to a simmer over medium heat.

    Add the sliced mushrooms and bamboo shoots to the simmering broth. Cook for about 5 minutes until the mushrooms soften.

      Stir in the diced tofu, minced garlic, soy sauce, ground white pepper, and sesame oil. Let it simmer for another 3-4 minutes.

        Slowly pour in the white vinegar, adjusting the amount to your desired tanginess, and stir well.

          In a small bowl, combine the cornstarch with water to create a slurry. Gradually add this to the soup while stirring to thicken it slightly. Cook for an additional 2 minutes.

            If using, slowly drizzle the beaten egg into the soup while continuously stirring to create egg ribbons.

              Remove the soup from heat and adjust the seasoning with salt as needed.

                Serve hot, garnished with chopped green onions for a fresh finish.
