1 ½ cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

Zest of 2 lemons

¼ cup fresh lemon juice

1 teaspoon vanilla extract

½ cup buttermilk

Powdered sugar (for dusting)

Lemon slices and mint leaves for garnish

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper for easy removal.

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

        Add the eggs, one at a time, mixing well after each addition. Then, stir in the lemon zest, lemon juice, and vanilla extract.

          Gradually add the flour mixture to the butter mixture, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined.

            Pour the batter into the prepared cake pan and smooth the top with a spatula.

              Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, carefully invert it onto a wire rack to cool completely.

                  Once the cake is completely cooled, dust the top with powdered sugar and garnish with lemon slices and fresh mint leaves.
