Ingredients

1 small green cabbage, finely shredded

2 medium carrots, julienned

1/2 red bell pepper, thinly sliced

2 green onions, chopped

1 tablespoon ginger, grated

2 cloves garlic, minced

1-2 tablespoons Sichuan peppercorns (optional, for extra heat)

3 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 tablespoon chili oil (adjust according to spice preference)

1 tablespoon roasted sesame seeds

Salt, to taste

Instructions

Start by preparing the vegetables: finely shred the cabbage, julienne the carrots, and slice the red bell pepper. Finely chop the green onions and set aside.

In a large bowl, combine the shredded cabbage, carrots, red bell pepper, ginger, garlic, and green onions. Toss gently to mix.

In a separate small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and chili oil. If you like it spicy, add in the Sichuan peppercorns to infuse the dressing with additional heat.

Pour the dressing over the mixed vegetables, ensuring all the ingredients are well coated. Taste and add salt if needed.

Let the salad sit for about 10 minutes to allow the flavors to meld before serving.

Just before serving, sprinkle the salad with roasted sesame seeds for added crunch.
