Ingredients

1 cup fresh strawberries, hulled and sliced

2 tablespoons granulated sugar

1 teaspoon lemon juice

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

4 large flour tortillas

1/4 cup graham cracker crumbs

Crushed pistachios for garnish (optional)

Instructions

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss to coat, then let them sit for about 10 minutes to macerate and release their juices.

Make the Cheesecake Filling: In another bowl, mix the softened cream cheese, powdered sugar, vanilla extract, and cinnamon. Blend until smooth and creamy.

Assemble the Rolls: Take a tortilla and spread a generous layer of the cheesecake filling over it, leaving about half an inch from the edges. Place a few spoonfuls of the macerated strawberries on top of the cream cheese layer.

Roll it Up: Starting from one end, gently roll the tortilla up tightly, securing the filling inside. Repeat this process with the remaining tortillas.

Coat in Crumbs: Roll each cheesecake roll in the graham cracker crumbs until evenly coated.

Chill and Serve: Place the rolls in the refrigerator for at least 30 minutes to firm up. Once chilled, slice each roll into 1-inch pieces.

Garnish: If desired, sprinkle crushed pistachios on top for an extra crunch and flavor.

                Prep Time: 15 minutes | Total Time: 1 hour | Servings: 4

                  - Presentation Tips: Arrange the cheesecake rolls on a platter, drizzling with any remaining strawberry juices and a sprinkle of powdered sugar for a beautiful finish.
