6 large flour tortillas

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and sliced

1/2 cup heavy whipping cream

1 tablespoon lemon juice

1/4 cup graham cracker crumbs (for coating)

Instructions
 

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

    Gradually add the powdered sugar and vanilla extract, continuing to mix until well incorporated.

      In a separate bowl, whip the heavy cream with lemon juice until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until blended.

        Lay a tortilla flat on a clean surface. Spread a generous layer of the cheesecake mixture evenly over the tortilla, leaving a small border around the edges.

          Add a layer of sliced fresh strawberries on top of the cheesecake mixture.

            Carefully roll the tortilla from one end to the other, creating a snug roll. Seal the edges gently by pressing them down.

              Repeat the process with the remaining tortillas until all are filled and rolled.

                Once all rolls are prepared, roll each in graham cracker crumbs to coat the outside lightly.

                  Slice each roll into bite-sized pieces for serving.
