Ingredients
  

1 lb ground beef (or turkey)

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet (1 oz) taco seasoning

2 cups cooked brown rice

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup salsa

1/2 cup chopped green onions

1/4 cup fresh cilantro, chopped (optional)

Salt and pepper to taste

Tortilla chips (for serving)

Instructions
 

Preheat the oven to 350°F (175°C).

    In a large skillet over medium-high heat, brown the ground beef or turkey until fully cooked, about 5-7 minutes. Drain excess fat if necessary.

      Stir in the black beans, corn, diced tomatoes with green chilies, taco seasoning, and cooked brown rice. Mix well until heated through, about 3-5 minutes.

        Remove the skillet from heat and stir in half of the cheddar and Monterey Jack cheese until melted and incorporated.

          Spread the mixture evenly into a greased 9x13-inch baking dish. Pour salsa over the top, spreading it out evenly.

            Sprinkle the remaining cheddar and Monterey Jack cheeses over the salsa layer.

              Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.

                Remove from the oven and let it cool for a few minutes. Top with chopped green onions and cilantro if desired.

                  Serve warm with tortilla chips on the side for scooping.
