6 large eggs

1 ripe avocado

2 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 tablespoon fresh dill, chopped

1 tablespoon lemon juice

2 green onions, sliced

Salt and pepper to taste

Optional: ¼ teaspoon garlic powder

Optional: Leafy greens for serving

Start by hard boiling the eggs. Place the eggs in a pot and cover with cold water. Bring to a boil over medium heat, then cover and remove from heat. Let sit for 10-12 minutes.

    Once cooked, transfer the eggs to an ice bath to cool for about 5-10 minutes. Peel the eggs and place them in a large mixing bowl.

      Mash the eggs with a fork, leaving some chunks for texture.

        Cut the avocado in half, remove the pit, and scoop the flesh into the bowl with the eggs. Mash the avocado gently with the eggs until slightly creamy.

          Add the mayonnaise, Dijon mustard, chopped dill, and lemon juice to the mixture. Stir well to combine.

            Fold in the sliced green onions and season with salt, pepper, and garlic powder if using. Mix gently until combined.

              Taste and adjust seasonings if necessary. You may want to add a bit more lemon juice for tanginess or extra salt to enhance flavors.

                Serve the egg salad over a bed of leafy greens or in your favorite sandwich bread. Enjoy!
