1 pound breakfast sausage, crumbled

8 slices of whole grain bread, cubed

6 large eggs

2 cups milk

1 cup shredded cheddar cheese

1 cup diced bell peppers (red, green, and yellow)

1 small onion, diced

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish

Country Gravy:

1/4 cup butter

1/4 cup all-purpose flour

2 cups milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Instructions
 

In a skillet over medium heat, cook the crumbled breakfast sausage until browned and fully cooked. Remove from heat and drain excess fat.

    In a large mixing bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and pepper.

      Add the cubed bread, cooked sausage, diced bell peppers, onion, and half of the shredded cheddar cheese to the egg mixture. Stir until everything is well coated.

        Grease a 9x13-inch baking dish and pour the breakfast mixture into it evenly. Sprinkle the remaining cheese on top.

          Cover the dish with plastic wrap or aluminum foil and refrigerate overnight (or at least for 4 hours) to let the flavors meld.

            Preheat the oven to 350°F (175°C). Bake the casserole uncovered for about 45-50 minutes, or until it is set and the top is golden brown.

              While the casserole is baking, prepare the country gravy. In a saucepan over medium heat, melt the butter.

                Add the flour to the melted butter and whisk constantly for about 1 minute to form a roux.

                  Gradually whisk in the milk, continuing to stir until the gravy thickens. Add garlic powder, onion powder, salt, and pepper to taste.

                    Once the casserole is finished baking, remove it from the oven and let it cool for a few minutes before serving.

                      Cut into squares and serve hot, drizzled with country gravy, and a sprinkle of fresh parsley for garnish.
