Ingredients
  

2 tablespoons olive oil

1 small onion, finely chopped

4 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 can (15 oz) tomato sauce

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1/2 cup ricotta cheese

1/2 cup mozzarella cheese, shredded

1/4 cup parmesan cheese, grated

1/4 cup gorgonzola cheese, crumbled

1/4 cup fontina cheese, shredded

Fresh basil leaves for garnish

Instructions
 

In a large skillet or saucepan, heat the olive oil over medium heat.

    Add the chopped onion and sauté for about 5 minutes, or until the onion is translucent.

      Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant, being careful not to burn it.

        Pour in the crushed tomatoes and tomato sauce. Stir well to combine.

          Season the mixture with oregano, basil, red pepper flakes, salt, and pepper. Bring to a simmer and let it cook for 15-20 minutes to allow the flavors to meld, stirring occasionally.

            Once the sauce thickens and is fragrant, reduce the heat to low.

              Stir in the ricotta cheese until fully incorporated, creating a creamy base.

                Add the mozzarella, parmesan, gorgonzola, and fontina cheeses to the sauce. Stir continuously until all the cheeses are melted and the sauce is smooth and bubbling.

                  Taste and adjust seasoning if necessary, adding more salt or red pepper flakes depending on your preference.

                    Remove the sauce from heat and let it cool for a few minutes before serving.
