4 large Russet potatoes, peeled and cut into cylinders (about 2 inches thick)

4 tablespoons unsalted butter

2 tablespoons vegetable oil

2 cups low-sodium vegetable or chicken broth

3 cloves garlic, crushed

2-3 sprigs fresh thyme

2-3 sprigs fresh rosemary

Salt and freshly ground black pepper to taste

Zest of 1 lemon (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Sear the Potatoes: In a large oven-safe skillet, heat the butter and vegetable oil over medium-high heat until the butter is melted and bubbling.

      Brown the Potatoes: Carefully add the potato cylinders to the skillet and sear on each side for 3-4 minutes or until they are golden brown. This should give them a nice crispy exterior.

        Add Flavors: Once browned, add the crushed garlic, thyme, rosemary, and lemon zest to the skillet. Stir gently to combine.

          Add Broth: Pour in the vegetable or chicken broth, ensuring it comes about halfway up the sides of the potatoes. Season the broth with salt and pepper to taste.

            Bake in the Oven: Transfer the skillet to the preheated oven and bake for about 25-30 minutes or until the potatoes are tender and the broth has reduced slightly.

              Finishing Touch: Remove the skillet from the oven and let it rest for a few minutes before serving. You can also spoon some of the reduced broth over the potatoes for extra flavor.
