1 lb thinly sliced beef (flank steak or sirloin)

2 large onions, thinly sliced

3 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon sugar

1 teaspoon thyme (fresh or dried)

Salt and pepper to taste

1 cup shredded Gruyère cheese

1 package (8 oz) of crescent dough

Fresh parsley for garnish (optional)

Caramelize the Onions: In a large skillet, melt the butter and olive oil over medium heat. Add the sliced onions and sprinkle with sugar, salt, and pepper. Sauté for about 20-25 minutes, stirring frequently, until the onions are golden brown and caramelized. Add thyme and mix well. Remove from heat and set aside to cool.

    Prepare the Beef: Season the sliced beef with salt and pepper on both sides. If needed, pound the beef slices gently to make them thinner.

      Assemble the Roll-Ups: Preheat your oven to 375°F (190°C). On a clean surface, unroll the crescent dough and separate it into triangles. Place a few slices of caramelized onions followed by a spoonful of shredded Gruyère cheese on each triangle. Lay a beef slice on top of the onions and cheese.

        Roll It Up: Starting from the wide end of the crescent triangle, roll it up towards the pointed end. Ensure that the filling remains contained within the roll. Place each roll-up seam-side down on a baking sheet lined with parchment paper.
