1 lb ground beef (80/20 blend)

1 large onion, thinly sliced

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon sugar

1 teaspoon salt

1/2 teaspoon black pepper

4 slices Gruyère cheese

4 hamburger buns, toasted

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

Fresh thyme leaves for garnish (optional)

Instructions
 

In a medium skillet, heat the butter and olive oil over medium heat.

    Add the sliced onions and sauté until they become soft and translucent, about 5 minutes.

      Sprinkle sugar and salt over the onions. Stir well and cook for an additional 15-20 minutes, stirring occasionally, until the onions are caramelized and golden brown. Set aside.

        Meanwhile, season the ground beef with black pepper and divide it into 4 equal portions. Form each portion into a patty, making a slight indentation in the center to prevent puffing during cooking.

          Preheat a grill or grill pan over medium-high heat. Cook the patties for about 4-5 minutes on each side for medium-rare (or longer depending on your preferred doneness).

            In the last minute of cooking, place a slice of Gruyère cheese on top of each patty, covering it with a lid to melt the cheese.

              While the patties are cooking, mix the mayonnaise and Dijon mustard in a small bowl. Spread this mixture on the bottom half of each toasted hamburger bun.

                Assemble the burgers by placing a cheesy patty on each bun, followed by a generous scoop of caramelized onions.

                  Top with fresh thyme leaves if desired, and cover with the top half of the bun.
