French Onion Meatloaf

1 lb ground beef

1 lb ground pork

2 cups French onion soup (canned or homemade)

1 cup breadcrumbs

1 large egg

1 medium onion, finely chopped

3 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded Gruyère cheese (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat a little olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes. Add minced garlic and cook for an additional 1-2 minutes until fragrant. Remove from heat and allow to cool slightly.

      In a large mixing bowl, combine ground beef, ground pork, sautéed onions, garlic, breadcrumbs, egg, 1 cup of French onion soup, Worcestershire sauce, thyme, smoked paprika, salt, and pepper. Mix until just combined, being careful not to overwork the meat.

        Shape the mixture into a loaf and place it in a lined or greased baking dish.

          Spread the remaining cup of French onion soup evenly over the top of the meatloaf.

            Bake in the preheated oven for 50-60 minutes or until the internal temperature reaches 160°F (70°C).

              In the last 10 minutes of baking, sprinkle the shredded Gruyère cheese over the top and return to the oven until melted and bubbly.

                Once done, remove from oven and let the meatloaf rest for about 10 minutes before slicing.

                  Serve warm, garnished with fresh parsley.
