2 tablespoons olive oil

2 large yellow onions, thinly sliced

2 cloves garlic, minced

1 tablespoon balsamic vinegar

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 tablespoon flour

1 cup low-sodium beef broth

1 cup shredded Gruyère cheese

Fresh parsley, chopped (for garnish)

Season the Pork Chops: Begin by seasoning the pork chops generously with salt and pepper on both sides.

    Sear the Pork Chops: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the pork chops and sear for about 4-5 minutes on each side until golden brown. Remove the chops from the skillet and set aside.

      Caramelize the Onions: In the same skillet, reduce the heat to medium. Add the sliced onions and a pinch of salt. Cook, stirring occasionally for about 10-15 minutes, until the onions are caramelized and golden brown. If the onions begin to stick, add a splash of water to help deglaze the pan.

        Add Garlic and Thyme: Once the onions are caramelized, stir in the minced garlic, balsamic vinegar, and thyme. Cook for an additional 2 minutes until fragrant.

          Thicken the Mixture: Sprinkle the flour over the onions and mix well, cooking for about a minute to remove the raw flour taste. Then gradually add the beef broth while stirring constantly to ensure there are no lumps.

            Simmer and Combine: Return the pork chops to the skillet, nestling them in the onion mixture. Reduce the heat to low, cover the skillet, and let it simmer for about 10-12 minutes, or until the pork is cooked through and reaches an internal temperature of 145°F (63°C).
