Ingredients

1 lb flank steak, pounded to about 1/4 inch thick

1 large onion, thinly sliced

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon dried thyme

Salt and pepper to taste

1 cup shredded Gruyère cheese

1/4 cup fresh parsley, chopped

Kitchen twine or toothpicks for securing

Instructions

Prepare the Onions: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and sauté for about 15-20 minutes, stirring occasionally, until the onions are caramelized and golden brown. Stir in balsamic vinegar, dried thyme, and season with salt and pepper. Cook for an additional 2-3 minutes. Remove from heat and set aside to cool slightly.

Prep the Flank Steak: Lay the pounded flank steak on a cutting board. Season both sides generously with salt and pepper.

Assemble the Pinwheels: Spread the caramelized onion mixture evenly over the steak, leaving a small border around the edges. Sprinkle the shredded Gruyère cheese evenly on top of the onions.

Roll the Steak: Starting from one end, carefully roll the steak tightly into a log. Use kitchen twine to tie it securely at intervals or secure it with toothpicks.

Cook the Pinwheels: Heat the remaining tablespoon of olive oil in a skillet over medium-high heat. Once hot, carefully place the pinwheels in the skillet. Sear for 3-4 minutes on each side until browned and cooked to desired doneness. For medium-rare, aim for an internal temperature of 135°F (57°C).

Rest and Slice: Once cooked, remove the pinwheels from the skillet and let them rest for about 5 minutes. Then, slice them into 1-inch thick pieces.

Serve: Arrange the pinwheels on a serving platter and garnish with fresh parsley.

                Prep Time: 20 minutes | Total Time: 50 minutes | Servings: 4

                  - Presentation Tips: Serve the pinwheels drizzled with a balsamic reduction for an extra flavor kick and a beautiful glaze. Pair with a side of roasted vegetables or a fresh green salad for a complete meal.
