The stars of this dish are the tomatoes. I love using large, ripe tomatoes. Varieties like beefsteak or heirloom offer great flavor. They are juicy and sweet. If you can, pick them fresh from the garden. This adds a special taste to your pie.

Ingredients

4 large fresh tomatoes, sliced

1 pre-baked pie crust (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1/4 cup fresh basil, chopped

1/4 cup fresh parsley, chopped

1 teaspoon garlic powder

Salt and pepper to taste

Olive oil for drizzling

Instructions

Preheat your oven to 375°F (190°C).

In a bowl, mix the mayonnaise, Dijon mustard, garlic powder, salt, and pepper until well combined.

Layer the sliced tomatoes on the pre-baked pie crust, overlapping them slightly.

Spread the mayonnaise mixture evenly over the tomatoes, ensuring even coverage.

Sprinkle the shredded mozzarella and crumbled feta cheese over the top.

Generously sprinkle the chopped basil and parsley across the pie for a pop of color and flavor.

Drizzle a little olive oil over the assembled pie for extra moistness and richness.

Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the tomatoes are slightly caramelized.

Once baked, remove from the oven and let it cool for about 10 minutes before slicing.
