Start by preparing the pineapple rings. Peel, core, and cut the fresh pineapple into approximately 1/2 inch thick rings. Pat the rings dry with paper towels to reduce excess moisture.

    In a mixing bowl, combine the flour, baking powder, cinnamon, and nutmeg. Mix well to combine the dry ingredients.

      Gradually add water to the flour mixture, stirring until you achieve a smooth, thick batter. If you’d like an extra tropical touch, fold in the shredded coconut for added texture and flavor.

        Heat the vegetable oil in a large skillet or frying pan over medium heat. To check if the oil is hot enough, drop a small amount of the batter into the oil; it should sizzle and rise to the surface.
