8 slices of whole wheat or white bread

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and sliced

1 tablespoon lemon juice

1/2 cup all-purpose flour

1/2 cup breadcrumbs (panko for extra crunch)

2 eggs, beaten

Vegetable oil for frying

Whipped cream for serving (optional)

Fresh mint leaves for garnish (optional)

Instructions
 

In a medium bowl, mix together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

    In a separate bowl, combine the sliced strawberries with lemon juice and set aside to marinate for about 10 minutes.

      Take four slices of bread and spread a generous layer of the cream cheese mixture on each slice.

        Top each cream cheese spread with a layer of the marinated strawberries, and then cover with the remaining four slices of bread to form four sandwiches.

          Trim the edges of the sandwiches (optional, for a neat appearance).

            Set up a breading station with three shallow dishes: one with flour, one with the beaten eggs, and one with breadcrumbs.

              Heat the vegetable oil in a large skillet over medium heat until hot (about 350°F or 175°C).

                Dip each sandwich first in flour, then in the beaten eggs, and finally in breadcrumbs, pressing gently to coat well.

                  Carefully place the coated sandwiches in the hot oil, frying for 2-3 minutes on each side or until golden brown and crispy.

                    Remove the sandwiches from the oil and drain on paper towels to remove excess oil.

                      Cut each sandwich diagonally and serve warm, topped with a dollop of whipped cream and garnished with fresh mint leaves if desired.
