Prepare the Cream Cheese Filling: In a mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Using an electric mixer, beat until smooth and creamy. Set aside.

    Assemble the Sandwiches: Lay out the slices of bread. Spread a generous layer of the cream cheese mixture on four slices. Top with sliced strawberries and a pinch of cinnamon. Place the remaining bread slices on top to form sandwiches.
