2 tablespoons olive oil

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped for garnish

Instructions
 

Prep the Pork Chops: Remove the pork chops from the refrigerator and let them sit at room temperature for about 30 minutes. This helps them cook evenly.

    Season the Chops: Pat the chops dry with paper towels. Season generously with salt and pepper on both sides.

      Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until it shimmers but is not smoking.

        Sear the Chops: Carefully place the pork chops in the skillet, making sure not to overcrowd the pan. Sear for about 5-6 minutes on the first side without moving them until a nice golden-brown crust forms.

          Flip and Add Flavors: Flip the chops over and add the butter, minced garlic, and thyme to the pan. As the butter melts, spoon it over the chops repeatedly to baste them for about 5 more minutes. The internal temperature should reach 145°F (63°C) for medium doneness.
