8 oz raw shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon lemon juice

1 teaspoon fresh parsley, chopped (plus extra for garnish)

8 slices of sourdough bread

4 slices of cheddar cheese

1 cup baby spinach

Salt and pepper to taste

Optional: Red pepper flakes for heat

Instructions
 

In a skillet, melt 2 tablespoons of butter over medium heat. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.

    Add the shrimp to the skillet and season with salt, pepper, and optional red pepper flakes. Cook for about 3-4 minutes, stirring occasionally, until the shrimp turn pink and are cooked through.

      Remove the skillet from heat and stir in the lemon juice and chopped parsley. Set aside the shrimp mixture.

        In another skillet or griddle, heat the remaining 2 tablespoons of butter over medium-low heat.

          Assemble the sandwiches by placing a slice of sourdough bread on the skillet. Top with a slice of cheddar cheese, followed by a handful of baby spinach, the garlic butter shrimp mixture, and another slice of cheddar cheese. Finally, top with another slice of sourdough bread.

            Grill each sandwich for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

              Remove the grilled cheese sandwiches from the skillet and let them cool for a minute before slicing.

                Garnish with additional chopped parsley and serve immediately.
