Garlic Butter Shrimp Scampi Lasagna

12 lasagna noodles

1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 lemon, zested and juiced

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Red pepper flakes (optional)

Cook the Lasagna Noodles: In a large pot of salted boiling water, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

    Prepare the Shrimp: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute, until fragrant, then add the shrimp. Cook for 3-4 minutes, or until the shrimp turn pink and opaque.

      Make the Sauce: Pour in the heavy cream, lemon juice, and lemon zest. Stir to combine, then add half of the Parmesan cheese, mixing until melted and smooth. Season with salt, pepper, and red pepper flakes (if using). Allow the sauce to simmer for 2-3 minutes.

        Layer the Lasagna: Preheat your oven to 375°F (190°C). Spread a thin layer of the creamy shrimp sauce on the bottom of a 9x13 inch baking dish. Layer 4 lasagna noodles on top, then add half of the remaining shrimp and sauce, followed by half of the mozzarella cheese and some chopped parsley. Repeat the layers: noodles, shrimp, sauce, mozzarella. Top the last layer of noodles with remaining sauce and sprinkle with the remaining Parmesan and mozzarella cheese.

          Bake: Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

            Serve: Let the lasagna cool for 10 minutes before slicing. Garnish with additional parsley and serve warm.
