Ingredients

1 lb (450g) sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and black pepper to taste

Optional: Fresh parsley, chopped for garnish

Instructions

Prepare the Steak: Season the steak cubes generously with salt and black pepper. Allow them to sit at room temperature for about 20 minutes for better cooking.

Heat the Pan: In a large skillet or frying pan, heat 2 tablespoons of butter over medium-high heat until melted and bubbling.

Cook the Steak: Carefully add the steak cubes to the pan in a single layer without overcrowding. Sear the steak for about 2-3 minutes on one side without moving them to get a nice crust, then flip and sear for another 2-3 minutes until browned. Adjust cooking time slightly based on desired doneness (medium-rare to medium).

Add Garlic and Herbs: Reduce the heat to medium. Push the steak bites to one side of the pan and add the remaining 2 tablespoons of butter to the cleared side. Once melted, add the minced garlic, rosemary, and thyme. Stir the garlic and herbs together, cooking for about a minute until fragrant.

Combine: Toss the steak bites in the garlic butter until fully coated, cooking for an additional minute. Taste and adjust seasoning with extra salt and pepper if needed.

Serve and Garnish: Remove the skillet from heat. Transfer the garlic butter steak bites to a serving platter. If desired, sprinkle with fresh chopped parsley for added color and flavor.
