4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 lb russet potatoes, peeled and cubed

½ cup milk (or cream for extra richness)

¼ cup sour cream

Prep the Potatoes: Start by placing the cubed potatoes into a large pot and cover them with water. Add a pinch of salt to the water. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are fork-tender.

    Sauté the Steak Bites: While the potatoes are cooking, heat olive oil in a large skillet over medium-high heat. Once hot, add the cubed beef sirloin to the skillet. Season with salt, pepper, smoked paprika, and thyme, and cook for about 3-4 minutes until browned on all sides.
