Garlic Butter Steak Bites with Crispy Cheddar Smashed Potatoes

For the Steak Bites:

1 lb sirloin steak, cut into bite-sized cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped

Salt and pepper to taste

For the Crispy Cheddar Smashed Potatoes:

1 lb baby potatoes

1 cup shredded sharp cheddar cheese

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Instructions
 

Prep the Potatoes:

    - In a large pot, bring salted water to a boil. Add baby potatoes and cook until fork-tender, about 15-20 minutes. Drain and let them cool slightly.

      Smash the Potatoes:

        - Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

          - Place cooled potatoes on the baking sheet, and using a potato masher or the bottom of a glass, gently smash each potato until flattened but still intact.

            - Drizzle olive oil over the smashed potatoes and sprinkle with garlic powder, paprika, salt, and pepper. Toss to coat evenly.

              Bake the Potatoes:

                - Bake the potatoes in the preheated oven for about 20 minutes until edges are crispy and golden brown.

                  - Remove the baking sheet from the oven, sprinkle shredded cheddar cheese over the smashed potatoes, and return to the oven for another 5-7 minutes, until the cheese is melted and bubbly.

                    Cook the Steak Bites:

                      - While the potatoes are baking, season the steak cubes with salt and pepper.

                        - In a large skillet over medium-high heat, melt 2 tablespoons of butter. Once hot, add the steak bites in a single layer. Cook for about 3-4 minutes on each side, or until they reach your desired doneness.

                          - Add the minced garlic and remaining butter to the skillet. Toss the steak bites to coat in the garlic butter, cooking for another minute until fragrant.

                            Finish and Serve:

                              - Remove the skillet from heat and stir in fresh parsley. Serve the steak bites hot alongside the crispy cheddar smashed potatoes.
